1. Noma, Copenhagen

Voted best restaurant in the world. Noma has two Michelin stars and is run by chef René Redzepi. It focuses on local seasonal ingredients (particularly vegetables, herbs, spices and wild plants) and does its own salting, smoking, pickling, drying and grilling.

2. Chez Panisse, Berkeley, California

Co-founded by Alice Waters in 1971, Chez Panisse produced local organic food decades before it became fashionable. Waters is a member of the California Hall of Fame (alongside Clint Eastwood and Walt Disney) and is vice president of the slow food movement.

3. Billy Kwong’s, Sydney

Run by Australian TV presenter and author, Kylie Kwong, this was New South Wales’ first ‘climate neutral’ restaurant, where you dine on locally grown, organic and biodynamic dishes in an atmosphere styled on a classic Chinese teahouse.

4. Bordeaux Quay, Bristol

The UK’s first restaurant to achieve a gold rating under the Soil Association’s sustainable catering scheme, this foodie hot spot blends fine dining with sustainable credentials, including buying local, ethically sourced ingredients, and reduces its fossil fuel consumption and unnecessary packaging.

5. De Kas, Amsterdam

This ten-year-old restaurant is run by chef Gert Jan Hageman, who converted a greenhouse into a stunning place to eat, with a menu that changes daily, depending on the available locally sourced produce.

  1. One other big thing that caters and restraints for that matter can do is buying bamboo disposable silverware! It is cheap and it biodegrades very quickly!
